S’mores Cookies Recipe

Anything with “S’mores” in front of it as a dessert will always be in my recipe book. Today I’m showing you how to make a homemade gooey smores cookie. Packed with marshmallows, chocolate and graham crackers, you will not be disappointed.

I’ll also show you how easy this s’mores cookie recipe is, taking only an hour with chilling time, which is very important for the chewy center and crispy edge we are looking to achieve. Odds are you already have most of these ingredients at home. If not save this recipe and RUN to the store real quick so you can be just as satisfied as I was after taking a bite into his soft, warm cookie.

Equipment & Ingredients

To make these smores cookies you will need these ingredients:

  • Butter
  • Brown Sugar
  • White Sugar
  • Vanilla Extract
  • Egg
  • Flour
  • Baking Soda
  • Salt
  • Chocolate Chips
  • Graham Crackers
  • Hershey’s Chocolate Bar
  • Jumbo Marshmallows

As for the equipment needed, the list is much shorter! You will only need 4 things:

Making the Cookie Dough

Make sure you start with softened butter when you are ready to mix together these cookies. Add the butter, salt, brown sugar and white sugar to a mixing bowl. Use a hand mixer or wooden spoon to blend everything together until a sugary paste is formed.

Add in the egg and vanilla extract next. Mix again until combined and mostly clump free. Simply add in all the dry ingredients to the wet. The flour and baking soda can go in all at once. This s’mores cookie recipe is so simple and foolproof, it is hard to even overmix this chocolate chip cookie dough. Fold together the wet and dry ingredients until a thick dough is created. Go ahead and give it a taste, so you can have an idea of just how AMAZING these smores cookies are going to taste once baked.

Last but not least to finish off the dough, you will want to add chocolate chips, folding everything together one more time. As you can see, the dough should still be sticky to touch, but that’s ok because that is what the chilling is for later.

How Butter Temperature Affects Cookies?

If you have tried out multiple cookie dough recipes you will notice sometimes they require cold butter, softened butter, and sometimes melted butter. There is a reason for these small differences in temperature that have a huge effect on the outcome of the actual dessert! This smores cookie recipe uses softened butter. I will let you in on the secrets behind each butter temperature and the textures created in cookies because of it…

Softened Butter – When using softened butter in a cookie recipe this allows the dough to be malleable enough to beat air into when combining the first ingredients such as the brown and white sugars in the recipe. The butter is soft enough to add that air, but not melt immediately when baking in the oven, so we don’t have a super thin cookie. This temperature of butter also makes the cookie a bit cakier and less chewy. The s’mores cookie recipe we are following today uses softened butter. It is the best because we are stuffing the cookie with lots of melty, chocolate-y goodness and we don’t want a super thin cookie that won’t hold all of that s’mores filling inside.

Cold Butter – Now I rarely make a cookie with straight cold butter, but it still does add a different effect to the baking method. Cold butter will form a flakier cookie by creating layers in the cookie dough as it is blended with the rest of the ingredients. This use in the dough will result in a very crispy cookie with a tender center. 

Melted Butter – Although this recipe does not include it, I absolutely LOVE melted butter in my cookies. This gives the ultimate chewiness. I take it a step further and brown the butter for an added nutty flavor to the recipe I am making. Since the dough will be softer after made with melted butter, this creates the perfect environment for the cookies to develop more gluten, helping creating that chewiness. If put straight in the oven, you will have a thin crispy cookie, but if chilled, this dough will give you a chewy center and crispy edge, my favorite consistency!

Transforming into S'mores Stuffed Cookies

Let’s get into the stuffing for this smores cookie recipe! Have the graham crackers, marshmallows, and Hershey’s chocolate in arms reach. Take about a 2 inch scoop full of chocolate chip cookie dough and flatten on a baking sheet covered in parchment paper. Break apart a graham cracker and fit in the middle of the cookie dough. Now cut the jumbo marshmallow in half. Place each half on each side of the graham cracker. Lastly, top with two pieces of Hershey’s chocolate bar. It will be stacked slightly high, but don’t worry these smores cookies will melt down perfectly in the oven.

To top off these cookies, add another 2 inch scoop full of cookie dough, flatten and place on top of the smores filling. Be sure to cover all smores stuffing, sealing the cookie closed with the other half of the chocolate chip cookie dough. Repeat this until all the cookie dough is used. It should create about 5 jumbo smores cookies. Now place these cookies, covered in plastic wrap, in the refrigerator to chill for 30 minutes.

Bake and Enjoy!

Preheat the oven to 350 degrees Fahrenheit. Once the cookies have been chilled and the oven is preheated they are ready to be baked! Bake in the oven for about 20 minutes. Based on your ovens temperature you may need a little less or more time. You will know they are done when they are golden brown and edges are slightly crispy. As you can see the marshmallow should be puffing out in multiple areas. That’s how you just KNOW it’s going to be good.

Ingredients

  • 1/2 cup and 2 tablespoons butter, unsalted

  • 1/2 cup brown sugar

  • 1/4 cup white granulated sugar

  • 1/2 teaspoon vanilla extract

  • 1 egg

  • 1 2/3 cup all purpose flour

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 3/4 cup semisweet chocolate chips

  • 4 graham cracker halves

  • 1 bar of Hershey's chocolate

  • 5-6 large marshmallows

Directions

  • In a mixing bowl, add the softened butter, brown sugar and white sugar. Blend with the hand mixer
  • Now add the vanilla extract and egg, mixing again with a hand mixer.
  • Pour in the flour, baking soda and salt. Blend until combined.
  • Fold in the chocolate chips.
  • Use a medium-large scooper to take some cookie dough and place it on the parchment paper. Flatten. On top add half of a graham cracker broken in two.
  • Then cut a large marshmallow in half and place the two halves on top.
  • Top with a portion of the chocolate bar. Take another scoop of cookie dough and flatten on top of the smores center to cover all of the pieces.
  • Repeat until all of the cookie dough is used up (about 5 cookies)
  • Place the cookies in the refrigerator for the 30 minutes.
  • Preheat the oven to 350 degrees Fahrenheit. Bake the cookies for 20-22 minutes until golden brown.
  • Remove from the oven and let cool for about 5 minutes.
  • Enjoy the gooey chocolate chip cookies!
