I am a HUGE lover of carnival food and one of my all time favorite snacks are those freshly glazed roasted pecans. Craving them year round even when I didn’t have a chance to access these deliciously sweet nuts, led me to want to create this recipe. And I’m going to tell you now, I did not disappoint!
Finding a cinnamon glazed roasted pecan recipe that is both coated with sweet cinnamon flavor and has a crunchy outer layer can be hard to find. I have made a regular cinnamon roasted pecan and let me tell you, this recipe takes those to whole other level.
Most of these ingredients you probably already have in your cabinet. It only takes less than 10 minutes to whip up and 45 minutes in the oven. So let’s get into the recipe!
Equipment & Ingredients
To make these glazed roasted pecans recipe you will need these ingredients:
- Eggs
- Water
- Vanilla Extract
- Honey
- Pecan Halves
- White Sugar
- Brown Sugar
- Cinnamon
- Nutmeg
- Salt
As for the ingredients, the list is much shorter! You will just need:
- Mixing Bowls
- Whisk
- Parchment Paper
- Baking Sheet
Make the Pecan Glaze
These simple glazed roasted pecans are quick and easy to make. Start by adding the honey, water, vanilla and egg white into a mixing bowl. Use a whisk to mix these ingredients together until bubbly and foamy. Then add in the pecan halves to the mixture. Fold everything together until all the nuts are fully coated.
Set this bowl aside and grab another clean bowl. Before making the cinnamon sugar mixture, start preheating your oven to 300 degrees Fahrenheit.
In the second bowl add the white sugar, brown sugar, nutmeg and salt all at once. With a fork blend the dry ingredients together. The nutmeg adds another level of sweet spice to this recipe. The addition of brown sugar and not just white helps create a thicker glaze around the pecans when mixed with the wet ingredients and then baked.
That simple addition is what turns a regular cinnamon roasted pecan into a cinnamon glazed roasted pecans. Pour the sugar mixture over the coated pecans and fold everything together until those sugars caramelize into the wet ingredients. Now you will have a thick glaze like pecan mixture.
Bake Bread
Prepare a baking sheet with parchment paper and pour the pecans on it. Spread them out evenly. Bake these in the oven for 45 minutes. Be sure to stir the pecans around every 15 minutes to prevent burning and allow the nuts to cook and roast evenly on all sides.
Break Apart and Enjoy!
Break apart the pecans once they have cooled some and go ahead and give them a taste while they are still warm. They will continue to be a bit sticky while warm, but once they are completely cooled, they will look and taste exactly like the carnival’s famous glazed roasted pecans.
To store, place these glazed roasted pecans in a tightly sealed Ziploc bag. They will stay fresh and last for weeks this way. I ate a huge handful the day of, saved some for the next few days to sneak into the movie theaters with me and then put these out for guests at a game night I had. They were a hit and gone before the night could end!

Glazed Roasted Pecans

1 egg white
1 tablespoon water
2 tablespoons honey
1/2 teaspoon vanilla extract
1 pound pecan halves
1/2 cup white sugar
1/2 cup brown sugar
1 1/2 teaspoons cinnamon

1 teaspoon salt
Directions
- Preheat the oven to 300 degrees Fahrenheit. Prepare a baking sheet with parchment paper and set aside.
- In a large mixing bowl add the egg white, water, vanilla and honey. Whisk together until combined.
- Throw in the pecan halves and coat completely in the mixture.
- In a separate bowl mix together the white sugar, brown sugar, cinnamon, nutmeg and salt until combined.
- Pour on top of the coated pecans, and toss together until each pecan is thoroughly coated.
- Pour onto the prepared baking sheet and spread the pecans evenly.
- Bake in the oven for 45 minutes or until the pecans are caramelized. Stir the pecans every 15 minutes through the baking time, to ensure they roast evenly.
- Remove from the oven and allow to cool for at least 10 minutes. Break the pecans apart and allow the glaze to fully cool on the nuts.
- Enjoy while still warm or allow to cool completely and store for later!
