As summer arrives, lemon is the perfect flavor for any dessert. Lemon bars are seen as such a difficult dessert, but today I am taking that away with these simple lemon bars.
I love the brown sugar shortbread crust under this soft and luscious lemon curd layer. Topped with powdered sugar makes this lemon dessert just perfect.

- Brown Sugar
- White Granulated Sugar
- Lemon Juice
- Lemon Zest
- Eggs
- Vanilla Extract
- Powdered Sugar

- Parchment Paper

Simple Lemon Bars

Ingredients
- Shortbread Crust
1/2 cup unsalted butter, softened
1 cup all purpose flour
1/4 cup brown sugar
1/4 cup white granulated sugar
- Lemon Curd Filling
1/2 cup lemon juice
1 tablespoon lemon zest
3 eggs
1/2 teaspoon vanilla extract
1 1/2 cups white granulated sugar
1/2 cup all purpose flour
- Topping
Powdered Sugar
Directions
- Preheat the oven to 350 degrees Fahrenheit. Prepare a baking dish with parchment paper and set aside.
- In a mixing bowl, add the flour, brown sugar and white sugar. Mix with a fork until combined. Then add the softened butter and blend into the sugars and flour until a crumbly dough forms.
- Transfer this into the prepared baking dish and press to create an even layer of cookie dough crust.
- Place in the freezer for 10 minutes. Then bake in the oven for 10 minutes.
- Meanwhile, make the lemon filling. In a separate mixing bowl, add the eggs, lemon juice, vanilla and lemon zest. Whisk together until combined.
- Then add the sugar and flour. Whisk again until incorporated.
- Once the crust has baked, let cool completely. This should take about 20 minutes.
- Then pour the lemon mixture on top of the cooled crust and place it in the oven to bake for another 30 minutes. The top of the lemon bars should be set and just slightly jiggly.
- Remove from the oven and let the lemon bars cool. Then place in the refrigerator for at least an hour before serving.
- Top with sifted powdered sugar, cut and enjoy!
