Ingredients

  • 1 medium onion, chopped

  • 3 garlic cloves, minced

  • 1 lb. ground beef

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • 2 cans tomato paste

  • 1 medium tomato, diced

  • 32 ounces chicken broth

  • 2 tablespoons dried basil

  • 1 teaspoon oregano

  • 1/2 teaspoon red chili flakes

  • 1 teaspoon garlic powder

  • 10 lasagna noodles, broken into pieces

  • 1/4 cup heavy cream

  • 2 cups mozzerella cheese

  • 1 1/2 cups ricotta cheese

  • 3/4 cup grated parmesan

  • 1 teaspoon garlic salt

Directions

  • In a large pot, add a little olive oil to a pan heating over the stove on medium heat. Once hot, add the onions. Cook down until soft and slightly transparent.
  • Add in the minced garlic, cooking for another 2 minutes until aromatic.
  • Break apart the ground beef into the pan with the onions and garlic. Season with salt and pepper. Cook while stirring every few minutes, until the meat is completely browned.
  • Add in the the tomato paste and diced tomatoes into the pan, stirring together until combined. Then add in the chicken broth and seasonings. Stir together and turn the heat down to medium low, letting the soup come to a boil.
  • Meanwhile, take another pot and fill with water. Cook your lasagna pasta how you would usually, breaking the lasagna noodles into the water, when the water has heated up.
  • Once the soup has come to a boil, add in the heavy cream and half of the mozzarella cheese. Stir together and place the soup on low heat until the pasta is done cooking.
  • In a smaller bowl, add in the other half of the mozzarella cheese, ricotta cheese, grated parmesan and garlic salt. Mix these cheeses until all combined.
  • Once the pasta is cooked, strain and place the noodles straight into the soup. Gently fold the noodles into the soup and it is ready to serve.
  • Place into the bowl and then add a large scoop of ricotta mixture on top of the soup, lastly sprinkling with some extra parmesan cheese.
  • Enjoy while warm!

Notes

  • To store for later, let the soup cool. Then place in a tightly sealed container in the fridge. This will last up to a week in the refrigerator.
