1 cup vanilla yogurt
1/2 cup vegetable oil
1 cup white granulated sugar
3 eggs
2 tablespoons lemon juice
1 1/2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons lemon zest
1/4 cup poppy seeds

1 cup powdered sugar
1 teaspoon lemon zest
1 tablespoons lemon juice
1 tablespoon milk

Directions
- Preheat the oven to 350 degrees Fahrenheit.
- In a large bowl add the yogurt, oil, sugar, eggs, and lemon juice. Whisk that together until completely combined and smooth.
- Then add the salt, baking powder and flour into the bowl and mix everything again until just incorporated. Make sure not to overmix.
- Fold in the lemon zest and poppy seeds into the batter.
- Now pour this batter into a nonstick sprayed loaf pan.
- Bake in the oven for 35-40 minutes or until a toothpick is stuck in and comes out clean.
- While the cake is baking, make the glaze.
- In a bowl add the powdered sugar and lemon zest, whisking together.
- Then add the lemon juice and milk, whisking until a thick glaze has formed.
- Once the cake is out of the oven let it cool completely.
- Remove from the loaf pan and pour the glaze over the top of the cake.
- Garnish with extra poppy seeds and lemon slices if desired.
- Cut and enjoy!
