Birthday Cake Blondies

Sometimes cake and cupcakes aren’t everyone’s favorite dessert. If you are more of a brownie or sugar cookie fan, this is the recipe for you. A delicious birthday cake blondie recipe to make for a loved one’s special day or even for yourself!

This recipe makes a sweet white chocolate blondie bar and is topped with a thick buttercream frosting that is TO DIE for. And of course nothing finishes off a birthday themed dessert like confetti sprinkles on top.

This recipe is super simple, so if you are looking for something quick and delicious, as a beginner baker this is the recipe for you. My mouth is already watering again thinking about these delicious birthday cake blondies, so lets get into the recipe!

Equipment & Ingredients

To make this birthday cake blondies you will need these ingredients:

  •  Butter
  • White Chocolate Chips
  • Eggs
  • White Sugar
  • Vanilla Extract
  • Almond Extract
  • All Purpose Flour
  • Salt
  • Confetti Sprinkles
  • Powdered Sugar
  • Heavy Cream
  • Pink Food Dye

As for the equipment, the list is much shorter! You will just need:

Whip Up the Blondie Batter

Pre heat the oven to 300 degrees Fahrenheit. To start the blondie batter heat up the butter in the microwave or a saucepan. In a bowl with the white chocolate chips, pour the hot butter on top and let sit for 5 minutes. Then stir the chocolate chips until they are fully melted and smooth. 

In a separate bowl add the eggs and whip with a whisk or hand mixer until foamy. Then add in the sugar, vanilla extract and almond extract, whipping once again and combined.

The whipped, foamy eggs will help the birthday blondies rise since this recipe doesn’t need any leaveners such as baking soda and powder.

Now go ahead and mix together the white chocolate and whipped egg mixture. Fold together using a rubber spatula. Then go in with the dry ingredients of salt and flour, folding together once again until combined. Now go in with the confetti sprinkles, folding the birthday cake blondies batter one more time to have the finished batter.

Bake The Birthday Blondies

Pour the batter into a 9×9 baking dish lined with parchment paper. Bake in the oven for 25 minutes or until a toothpick is inserted and comes out clean. As shown in the picture above you should notice a nicely browned blondie. Let these cool for at least 30 minutes while you start making the buttercream frosting for the birthday cake blondies.

Buttercream Frosting

This quick buttercream frosting is super quick and easy just like these blondies! Start by adding the butter to a mixing bowl with the vanilla extract. Blend together until combined. Then add the powdered sugar. Use a hand mixer to blend everything together until a thick buttercream frosting forms. Dye the frosting pink with a few drops of dye. 

Once the birthday cake blondies have cooled, spread the buttercream all over the top, spreading evenly. Last, but not least sprinkle the blondies with more confetti sprinkles. Place in the fridge and allow the buttercream to chill a bit. Cut the blondies into 9 even bars and enjoy!

Sweet and soft white chocolate birthday blondies topped with a vanilla buttercream frosting.

Ingredients

  • Blondie Batter
  • 1/2 cup butter, unsalted

  • 2 eggs

  • 1/3 cup white granulated sugar

  • 1 teaspoon vanilla extract

  • 1 teaspoon almond extract

  • 3/4 cup all purpose flour

  • 1 teaspoon salt

  • 1/4 cup birthday confetti sprinkles

  • Frosting
  • 34 cup butter, unsalted

  • 1 teaspoon vanilla extract

  • 4 tablespoons heavy cream

  • Pink Food Dye

  • Extra confetti sprinkles

Directions

  • Preheat the oven to 300 degrees Fahrenheit. Prepare a 9x9 baking dish with parchment paper and set aside.
  • In a mixing bowl melt the butter and white chocolate together in the microwave at 30 second intervals, mixing in between, until smooth. This can also be heated over the stuff in a double boiler until melted.
  • In a separate bowl and the two eggs and use a hand mixer to whip together until foamy.
  • Add the sugar, vanilla, and almond extract and whip together again until combined.
  • Pour the chocolate and butter mixture into the egg mixture and mix with the hand mixer until no streaks are left.
  • Add the salt and flour. Folding into the wet mixture until combined. Add the sprinkles and fold into the batter until evenly distributed.
  • Pour the batter into the prepared baking dish and bake for 25 minutes. While that is baking, make the frosting.
  • In a bowl add the butter and powdered sugar. Mix with the hand mixer until combined. Then add the vanilla and heavy cream, mixing again until smooth. Use a drop of food dye to create a light pink frosting if desired.
  • Once the blondies are done, let cool fully before frosting.
  • Sprinkle extra sprinkles on top, remove from the pan with the parchment paper and cut the blondies.
  • Serve and enjoy!
