Ingredients
- Peach Cobbler Filling
7 peaches, peeled and diced into chunks
3/4 cup brown sugar
1/2 cup white granulated sugar
2 tablespoons cornstarch
1 teaspoon lemon juice
1 teaspoon vanilla extract
1 tablespoon cinnamon
3/4 teaspoon nutmeg
1/2 teaspoon salt
- Cinnamon Sugar Mixture
1 cup white granulated sugar
1 tablespoon cinnamon
- Biscuit Topping
10 Grands Buttermilk biscuits, cut into squares
3 tablespoons unsalted butter, melted
Directions
- Preheat the oven to 350 degrees Fahrenheit.
- In a mixing bowl, add the sliced and peeled peaches. Add the white sugar, brown sugar, vanilla, lemon juice, cornstarch, cinnamon and nutmeg, and salt all at once.
- Mix these ingredients with the peaches, coating them completely in this sticky mixture.
- Pour this into the baking dish and bake for 10 minutes.
- While that bakes, prepare the biscuit topping. In a separate mixing bowl add the sugar and cinnamon, stirring together until combined.
- Cut each refrigerated biscuit into 4 pieces, repeating with all 10 biscuits. Coat all the biscuits with the cinnamon sugar mixture by placing in the bowl and tossing around.
- Take the peaches out of the oven and top with he cinnamon sugar biscuit pieces. Leave almost no peach uncovered. Drizzle the tops of the cinnamon sugar biscuits pieces with the melted butter.
- Place this baking dish back in the oven and bake for 35 more minutes until the biscuit topping is completely cooked through, golden brown and the peach filling is bubbling around the sides.
- Remove from the oven and let cool for 10 to 15 minutes. This will also allow the cobbler filling to thicken slightly, but the dessert will still be warm.
- Serve and top with ice cream or enjoy plain!
