minutesIngredients
- Cookie Dough
1 cup unsalted butter, melted
1 1/4 cups brown sugar
1/2 cup white granulated sugar
2 eggs
2 teaspoons vanilla extract
2 1/2 cups all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
2 cups chocolate chips
- Brownie Filling
1 box fudge brownie mix + ingredients on box
Directions
- Preheat the oven to the temperature on your brownie box mix.
- In a large mixing bowl add the brownie mix along with the ingredients listed on the box. Whisk together until combined and smooth.
- Transfer to an 8x8 baking dish lined with parchment paper and spread evenly.
- Bake in the oven for 8-10 minutes less than the time stated on the box mix directions. This will ensure fudgy, slightly undone brownies.
- While that is baking, make the chocolate chip cookie dough.
- In a separate bowl, add the melted butter, brown sugar and white granulated sugar. Whisk together until combined.
- Then add in the eggs and vanilla extract. Whisk again until smooth.
- Now, add in the flour, baking soda and salt. Fold the dry ingredients into the wet until incorporated.
- Lastly, pour in the chocolate chips and fold into the batter until evenly distributed.
- Cover this dough or transfer to plastic wrap to cover and place in the fridge for 30 minutes to chill.
- Once the brownies are done, let them cool completely.
- Remove from the pan and cut into small ½ inch by ½ inch squares, creating about 25 from the square brownie sheet.
- Preheat the oven to 350 degrees Fahrenheit.
- Take the chilled cookie dough, scoop a large ball out and flatten in your hand. Place a small square piece of the brownie and press into the center of the chocolate chip cookie dough.
- Fold the edges of the cookie dough up around the brownie piece. Then finish the top with a smaller piece of cookie dough to cover and seal the rest of the brownie inside the dough ball.
- Repeat with the rest of the dough and place each finished dough ball on a baking sheet covered in parchment paper.
- Place them at least 2 inches apart from each other, only fitting 8 cookies on a pan at a time.
- Bake in the oven for 15 minutes or until the edges of the cookies are golden brown and the center is only slightly undercooked.
- Remove from the oven and allow the cookies to finish baking and setting for about 5 minutes.
- Serve and enjoy these brownie stuffed chocolate chip cookies!
