Brownie Stuffed Cookies

These brownie stuffed cookies are made with a homemade chocolate chip cookie dough and filled with fudgy brownie bites that create the most decadent dessert. If that sounds good to you, then let’s hop right into this recipe.

Equipment & Ingredients

To make this brownie stuffed cookies you will need these ingredients: 

  • Flour
  • Unsalted Butter
  • Brown Sugar
  • Eggs
  • Vanilla Extract
  • All Purpose Flour
  • Baking Soda
  • Salt
  • 2 cups chocolate chips

As for the equipment, this is all you will need:

  • Mixing Bowls
  • 9×13 Baking Sheet
  • Parchment Paper

These cookies are best had with a tall glass of milk or topping with some vanilla ice cream. Definitely let these brownie stuffed cookies cool at least 5 minutes to let the cookies finish cooking and setting once done.

Brownie Stuffed Cookies

Ingredients

  • Cookie Dough
  • 1 cup unsalted butter, melted

  • 1 1/4 cups brown sugar

  • 1/2 cup white granulated sugar

  • 2 eggs

  • 2 teaspoons vanilla extract

  • 2 1/2 cups all purpose flour

  • 3/4 teaspoon baking soda

  • 1/2 teaspoon salt

  • 2 cups chocolate chips

  • Brownie Filling
  • 1 box fudge brownie mix + ingredients on box

Directions

  • Preheat the oven to the temperature on your brownie box mix.
  • In a large mixing bowl add the brownie mix along with the ingredients listed on the box. Whisk together until combined and smooth.
  • Transfer to an 8x8 baking dish lined with parchment paper and spread evenly.
  • Bake in the oven for 8-10 minutes less than the time stated on the box mix directions. This will ensure fudgy, slightly undone brownies.
  • While that is baking, make the chocolate chip cookie dough.
  • In a separate bowl, add the melted butter, brown sugar and white granulated sugar. Whisk together until combined.
  • Then add in the eggs and vanilla extract. Whisk again until smooth.
  • Now, add in the flour, baking soda and salt. Fold the dry ingredients into the wet until incorporated.
  • Lastly, pour in the chocolate chips and fold into the batter until evenly distributed.
  • Cover this dough or transfer to plastic wrap to cover and place in the fridge for 30 minutes to chill.
  • Once the brownies are done, let them cool completely.
  • Remove from the pan and cut into small ½ inch by ½ inch squares, creating about 25 from the square brownie sheet.
  • Preheat the oven to 350 degrees Fahrenheit.
  • Take the chilled cookie dough, scoop a large ball out and flatten in your hand. Place a small square piece of the brownie and press into the center of the chocolate chip cookie dough.
  • Fold the edges of the cookie dough up around the brownie piece. Then finish the top with a smaller piece of cookie dough to cover and seal the rest of the brownie inside the dough ball.
  • Repeat with the rest of the dough and place each finished dough ball on a baking sheet covered in parchment paper.
  • Place them at least 2 inches apart from each other, only fitting 8 cookies on a pan at a time.
  • Bake in the oven for 15 minutes or until the edges of the cookies are golden brown and the center is only slightly undercooked.
  • Remove from the oven and allow the cookies to finish baking and setting for about 5 minutes.
  • Serve and enjoy these brownie stuffed chocolate chip cookies!
