  • Poppy Seeds
  • Lemon Juice
  • Flour
  • Eggs
  • Vegetable Oil
  • White Granulated Sugar
  • Baking Powder
  • Salt
  • Lemon Zest
  • Vanilla Yogurt
  • Powdered Sugar
  • Milk

  • Mixing Bowls
  • Loaf Pan
  • Parchment Paper

Ingredients

  • Batter
  • 1 cup vanilla yogurt

  • 1/2 cup vegetable oil

  • 1 cup white granulated sugar

  • 3 eggs

  • 2 tablespoons lemon juice

  • 1 1/2 cups all purpose flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 2 tablespoons lemon zest

  • 1/4 cup poppy seeds

  • Lemon Glaze
  • 1 cup powdered sugar

  • 1 teaspoon lemon zest

  • 1 tablespoons lemon juice

  • 1 tablespoon milk

  • Garnish
  • Poppy Seeds

  • Lemon Slices

Directions

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a large bowl add the yogurt, oil, sugar, eggs, and lemon juice. Whisk that together until completely combined and smooth.
  • Then add the salt, baking powder and flour into the bowl and mix everything again until just incorporated. Make sure not to overmix.
  • Fold in the lemon zest and poppy seeds into the batter.
  • Now pour this batter into a nonstick sprayed loaf pan.
  • Bake in the oven for 35-40 minutes or until a toothpick is stuck in and comes out clean.
  • While the cake is baking, make the glaze.
  • In a bowl add the powdered sugar and lemon zest, whisking together.
  • Then add the lemon juice and milk, whisking until a thick glaze has formed.
  • Once the cake is out of the oven let it cool completely.
  • Remove from the loaf pan and pour the glaze over the top of the cake.
  • Garnish with extra poppy seeds and lemon slices if desired.
  • Cut and enjoy!
