Simple Red Velvet Cake Recipe

1 1/2 cups all purpose flour
1 cup cake flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups white granulated sugar
3/4 cup vegetable oil
2 eggs
1 cup buttermilk
1 teaspoon vanilla extract
1 teaspoon almond extract
1/2 cup warm water
red food dye
- Cream Cheese Frosting
3/4 cup unsalted butter, softened
8 ounces cream cheese, softened
6 cups powdered sugar
2 tablespoons milk
Directions
- Preheat the oven to 350 degrees Fahrenheit. Prepare 2 9 inch round baking pans with baking spray and or parchment paper. Set aside.
- In a large mixing bowl, add in all the dry ingredients at once. The flour, cake flour, cocoa powder, sugar, baking powder, baking soda and salt. Whisk this together until the dry ingredients are completely incorporated.
- Then add in the vegetable oil, eggs, buttermilk, vanilla, almond extract and warm water. Add in a generous amount of red food dye with the wet ingredients. Whisk slowly at first to distribute the wet ingredients in the dry and then quickly to blend the batter until smooth and it is a deep red color.
- Split this batter evenly between the two prepared baking pans when pouring. Bake in the oven for 30 minutes or until a toothpick inserted comes out clean.
- While the cake bakes, make the cream cheese frosting. In another bowl add in the softened butter and cream cheese. Blend together with a hand mixer until smooth.
- Then add in the powdered sugar, blending on low first until combined, then increasing the speed to medium high to make the frosting fluffy.
- Add in the milk and blend on medium high speed until creamy.
- Once the cake is done, let cool completely.
- Place the bottom half of the cake layer on a serving dish or parchment paper to frost. Place a large amount of frosting on the top of the first layer and spread evenly. Then place the second cake layer on top.
- Frosting the top half as well, creating about a 1/2 inch layer of frosting. Then make your way down the sides of the cake and frost the edges until everything is covered.
- Cut, serve and enjoy!
Notes
- If you would like add a garnish, when pouring the batter for the cakes leave a little aside and place in a cupcake liner and pan and bake separately. Once its done crumble the red velvet cupcake and use the crumbs as garnish around the frosted red velvet cake.
