A dessert that’s packed with chocolate chip cookies and Oreos stuffed in a thick brownie is something I know we are all dying to eat after dinner tonight. This brownie recipe is taken to the next level with this brown butter brownie batter.
Brownies are such a staple dessert that anyone can make. I promise you won’t fail at this recipe with my direction. So lets get started!

How to Brown the Butter
The browned butter brownie batter is a very important part in making these thick and fudgy brownies have so much flavor. In a pan take the butter and let it melt over medium heat. As it completely melts it will start bubbling. Stir every minute or so until you begin to smell nuttiness and the butter is browned, as shown above. You want ALL the little browned pieces that cooking this butter has created!
Make the Brownie Batter
Transfer that hot butter into a bowl with the chocolate chips in it. At this point let it sit for 5 minutes before stirring together so the butter can melt. Use a spoon to combine everything afterwards until you reach a smooth consistency. Set this aside while we continue this slutty brownies recipe easy.
In another large mixing bowl add in the sugars and eggs. Whisk this together until you combined and continue whisking until the mixture becomes a slightly lighter shade.
This aerating method for the sugar and eggs help create a nice structure for the slutty brownies and helps them rise in the oven. This is important as we want thick and fudgy brownies, but since this slutty brownies recipe easy doesn’t contain any leaveners, like baking soda or powder, we don’t want no lift at all.
Once the eggs and sugar is aerated. Take the melted chocolate butter mixture and add it to the eggs, whisking until combined. Next comes the flour, cocoa powder, salt and espresso powder. Layering these slutty brownies are my favorite part! Although the name isn’t kid friendly, this part of baking the recipe definitely is, if you want to let kids join in on the fun. Just tell them they are called “loaded” brownies instead.
Take the chocolate chip cookie dough and break off pieces of it into the 8×8 baking dish. Laying the bottom of the dish. Then pour half of the brown butter brownie batter on top to cover all the cookie dough pieces. Now take the Oreos and arrange 9 of them throughout the dish. I placed them to fit where I would cut these brownies after baking, to make that process easier in the future. After the Oreo layer, pour the rest of the batter on top and spread evenly with a rubber spatula.
To top this slutty brownies recipe easy, place more cookie dough pieces and crushed Oreos on top before we get ready to throw this bad boy in the oven!
Bake and Serve!
Once the layers are completed, place the baking dish in the oven for 35-40 minutes at 350 degrees Fahrenheit. Before removing from the oven, test with a toothpick for doneness. You may want to bake for a little more or little less time depending on if you prefer a more gooey brownie or more firm.
After removing these brownies from the oven let cool for at least half an hour. I know it is tempting to want to dig in, but the brownies will fall apart if you try it cut them immediately.

1 1/2 sticks unsalted butter, browned
4 ounces semisweet chocolate chips
1/2 cup white granulated sugar
1/2 cup brown sugar
3 eggs
1 teaspoon vanilla extract
1/2 cup all purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon espresso powder
1/2 teaspoon salt
Chocolate chip cookie dough
10-12 Oreos
Directions
- Brown the butter for the brownie batter in a pot. Stir continuously until the melted butter begins to create brown bits at the bottom of the pot and give off a nutty scent.
- Add the semi sweet chocolate chips immediately to the hot butter and mix together until completely melted. Remove from the heat.
- In a separate bowl, combine the sugar, brown sugar, eggs and vanilla. Beat until thick and fluffy, use a hand mixer if available, but a whisk can still be used if not. You will notice the mixture has lightened in color as well.
- Pour in the brown butter and melted chocolate mixture and mix together on low speed or with a whisk until combined.
- Fold in the cocoa powder, flour and espresso powder until combined. Use a rubber spatula not a mixer to ensure you don’t overmix.
- In a baking dish break pieces of the chocolate chip cookie dough and place around the bottom of the pan.
- Pour half of the brownie batter over the cookie dough. Then place a layer of 9 Oreos on top. Lastly Pour the rest of the brownie batter on top and spread evenly.
- Sprinkle extra cookie dough on top as well as crumbled Oreos.
- Place in the oven and bake for 35-40. The brownies will be set and check with a toothpick for doneness.
- Remove from the oven and let the brownies rest for 30 minutes at room temperature. Cut the brownie slices, serve and enjoy!
Notes
- You can make this recipe without browning the butter and just melting, but I like the added chewiness and nutty flavor it gives.
- Running your knife under hot water then wiping off between each slice will help you achieve clean brownies slices.
