Vegan Homemade Crunch Bars

I am so excited to share with you all this homemade crunch bars recipe that I made. Even happier to share a vegan recipe. We all deserve delicious sweets, even with certain diets and lifestyles.

As a baker who’s been baking since childhood, I have realized there is not recipe that can’t be transformed into a vegan masterpiece. No one said it was going to be any healthier though so don’t get that part twisted! Just know vegan never means less sugar, so do with that information what you please.

These vegan peanut butter homemade crunch bars are to die for. Not only that, but this recipe only has 5 ingredients and takes less than 20 minutes to put together.

Equipment & Ingredients

Start by making sure you have all the ingredients and equipment needed to follow this chocolate crunch bars recipe. If you are a vegan half of this you probably already have, but a few ingredients can be harder to find and I will link the ones I personally used for you all! You will need:

Personally when I was creating this recipe, I had never seen vegan rice crispy cereal or peanut butter, so I will show you the brands I like. As for equipment, this is a very simple homemade crunch bars recipe so you honestly only need a few items.

Melting Chocolate & Peanut Butter

In a bowl add the vegan chocolate chips, vegan peanut butter, maple syrup and coconut oil. Simply microwave this at 30 second intervals and mix in-between until completely smooth.

This will give you a deliciously shiny chocolate mixture to add to create the homemade crunch bars.

Making Crispy Mixture

I told you this recipe was super simple, right? We are basically done!

In a bowl with the vegan rice crispies measured out, add the melted chocolate mixture. Use a spoon or rubber spatula to mix together and evenly coat all the cereal. 

Refrigerate & Cut

Now take a baking dish and line it with parchment paper. Add the homemade crunch bars mixture into the dish and spread evenly with a rubber spatula.

Refrigerate for at least 1 hour until hardened.

Remove the vegan crunch bars from the baking dish and cut out bite size pieces. You can create any shape or size you want. If you are a bit of a perfectionist like me, cut off the edges as seen above. That way you have an even more presentable look for these homemade crunch bars if you are serving them to family or friends.

YUM! Make this dessert for all your vegan loved ones and they sure won’t be disappointed. These homemade crunch bars have a delicious crunch and the chocolate and peanut butter just melted in your mouth when you take the first bite.

Vegan Peanut Butter Crunch Bars

Ingredients

  • 3 cups vegan rice crispy cereal

  • 1 1/2 cups vegan semi-sweet chocolate chips

  • 1 cup vegan peanut butter

  • 1/2 maple syrup

  • 1/4 cup coconut oil

Directions

  • Prepare a baking dish with parchment paper and set aside.
  • In a bowl, measure the 3 cups of crispy cereal and set aside.
  • In a separate bowl, melt the chocolate, peanut butter, maple syrup and coconut oil together by heating in the microwave at 30 second intervals, stirring in between.
  • Pour melted mix over cereal and fold together until combined.
  • Place batter into the baking dish and smooth out evenly.
  • Let firm in the refrigerator for at least an hour.
  • Cut the bars and enjoy!

Notes

  • While pure maple syrup is vegan by nature, be specific in what brand you use, because some have added animal products
  • For perfectly rectangular edges on each piece, use a knife to cut away the edge of each side of the pan of crunch mixture after hardened and unwrapped from the parchment paper.
