- ⅔ cup unsalted butter melted and cooled
- ¼ cup white granulated sugar
- ¼ cup brown sugar
- 2 teaspoons salt
- 8 cups bread flour
- 2 tablespoons active dry yeast

Activate the Yeast
Prepare Yeast Mixture: In a small bowl, combine warm water, warm milk, and 1 tablespoon of the granulated sugar. Stir to dissolve. Sprinkle the active dry yeast over the top and let it sit for 5–10 minutes until frothy.
Mix the Dough
Combine Wet Ingredients: In a large mixing bowl, whisk together the eggs, melted butter, remaining granulated sugar, brown sugar, and salt. Stir in the yeast mixture.
Add Dry Ingredients: Gradually add the bread flour, 4 cups at first, mixing with a hand mixer or dough hook attachment. Then add one cup at a time while mixing with the hook attachment until a slightly sticky dough forms.
Double in Size: Place the dough in a greased bowl, cover, and let it rise in a warm place for about 20 minutes, or until doubled in size.
Shape the Rolls
Divide the Dough: Once risen, punch down the dough and divide it into 18 equal portions.
Shape into Logs: Roll each portion into a long log, about 8–10 inches in length.
Form the Bird Shape: Tie each log into a loose knot. Position the knot so the top loop becomes the bird’s head and the tail end becomes the bird's tail.
Create the Beak: Pinch one end of the top loop to form a pointed beak.
Indent the Tail Feathers: Use a knife or kitchen scissors to make small cuts at the other end to resemble feathers.
Second Rise and Bake
Let Rise: Place the shaped rolls on a parchment-lined baking sheet. Cover with a clean towel and let them rise for 30 minutes.
Bake: Preheat the oven to 375°F (190°C). Bake the rolls for 18–20 minutes, or until golden brown and cooked through.
